Make the shortbread base
Heat the oven to 325°F. While it warms, lightly butter a 9-inch square pan and line it with parchment, leaving an overhang so you can lift the finished slab out later.
In a bowl, combine 1½ cups all-purpose flour, ¼ cup superfine sugar, and ¾ cup cold, cubed unsalted butter. Rub the butter into the dry mix with your fingertips until it looks like coarse breadcrumbs and sticks together when squeezed.
Tip the mixture into the prepared pan. Press it down firmly and evenly with the back of a spoon, making sure you get right into the corners. Prick the surface all over with a fork to stop it bubbling up, then slide the pan into the oven for 25–30 minutes, or until the shortbread is pale golden. Let it cool completely in the pan.
Cook the caramel layer
Pour 1 can (14 oz) sweetened condensed milk, ½ cup unsalted butter, ½ cup light brown sugar, and 2 Tbsp golden syrup (or light corn syrup) into a heavy saucepan. Stir continuously over medium-low heat until the sugar dissolves and the butter melts.
Bring the mixture to a gentle boil, stirring all the time with a wooden spoon or heat-proof spatula so it doesn’t scorch. After about 6–8 minutes it will thicken and turn a rich toffee color. You’re aiming for a soft-set: when you drag the spoon across the bottom of the pan, the trail should hold for a second before slowly flowing back.
Remove from heat, whisk in 1 tsp pure vanilla extract, then immediately pour the caramel over the cooled shortbread. Tilt the pan to level it, pop any bubbles with a toothpick, and leave to set at room temperature for about 1 hour. If you’re impatient, 20 minutes in the fridge works too.
Top with chocolate
Chop 7 oz bittersweet chocolate (60–70%) and melt it with 2 Tbsp heavy cream in a heat-proof bowl set over a pan of barely simmering water (the bowl shouldn’t touch the water). Stir until silky and just warm, not hot.
Pour the chocolate over the firm caramel, smoothing it with an offset spatula into a thin, even layer. For the signature Mary Berry tidy finish, gently shake the pan side-to-side to settle the topping, then run a palette knife from edge to edge to eliminate ridges.
Refrigerate for 20 minutes to set the chocolate. Remove and score into squares with a sharp knife while the chocolate is still slightly soft; this prevents it from shattering later. Chill another 30 minutes for clean slices.
Slice and serve
Lift the slab out using the parchment wings. Set it on a board and, with a warm dry knife (dip in hot water then wipe dry), cut into 16 petite squares or 9 generous bars. Wipe the blade between cuts for picture-perfect layers.
Store the squares in an airtight container, layered with parchment, for up to 1 week—or freeze for up to 3 months. They taste best at room temperature, so let refrigerated pieces sit out for 15 minutes before serving for maximum buttery, caramel-chocolate bliss.
To elevate your Mary Berry millionaire shortbread, consider a few tweaks. For a gooier caramel layer, avoid overcooking the caramel mixture. If you prefer a crunchier shortbread base, bake it for a few minutes longer, keeping a close eye to prevent over-browning.
- Add a sprinkle of sea salt on top of the chocolate layer for a sweet and salty contrast.
- Experiment with different types of chocolate for the top layer, such as milk chocolate or white chocolate, for a unique twist.
- For a festive touch, use colored sprinkles or edible decorations on top of the chocolate layer.
Serve your millionaire shortbread in small squares as it’s rich and indulgent. It’s perfect for a dinner party or as a special treat with a cup of coffee or tea.
